Pesto is fantastic on so many things. You can use it on your breads, pastas, meats and even salads. I am slightly allergic to pine nuts and want to reduce my dairy intake, so I reinvented pesto for my family. I hope you like it.
Ingredients:
- 2-3 cups of washed basil leaves
- 6-9 garlic cloves
- 1 tsp salt
- 1/2 cup roasted cashew nuts
- 1/3 cup Extra virgin olive oil
- 1 drop of Basil essential oil
Directions:
- In a food processor, blend nuts and garlic together.
- Add the rest of the ingredients and blend till mixture becomes a paste
- Serve immediately or store in a small jar and refrigerate.
