My family loves getting together and cooking traditional Vietnamese dishes. I have very good memories making food and eating food with my family. It has certainly been a bonding time for friends and family.
Ingredients:
- 1 pack large egg roll wrappers
- 1 lb ground meat of your choice
- 2/3 cup finely chopped onions
- 1/2 cup grated carrot
- 2 eggs
- 1/2 cup chopped cooked vermicelli noodles (soak noodles in warm water, drain well, & chopped)
- 1 tsp salt
- 1 tsp pepper
- 1/2 cup sweet potatoes (for added sweetness. If you don’t have extra sweet potatoes, add a teaspoon or brown sugar)
- ⅛ cup wood ear mushrooms, chopped (Optional)
- 1/2 cup canned water chestnut (Optional)
- Olive oil for frying
- Cornstarch & water for the glue
Directions:
- Mix ingredients together in a bowl

Add 1 heaping tbsp onto wrappers and wrap tightly using cornstarch and water as glue (refer to pics below)

Deep fry in Virgin Olive oil

Serve with Vietnamese fish sauce dip
Makes about 25 rolls
