For some people, it’s a challenge to eat healthily during winter because we just want to load up on the comfort foods! Here is a great soup to make that is easy, will satisfy but is super healthy. This makes enough for 5-6 people.
Ingredients
4 peeled medium potatoes
4 cups almond milk
1 brown onion
2-3 cloves of garlic
1 avocado
1/3 cup green onions (shallots)
2 cups frozen broccoli
2 Tbsp Veggie stock paste (mine is homemade)
Pepper for taste
Directions
I use a Bellini kitchen master which makes healthy cooking so easy.
- Sauté onion and garlic. (I use the Bellini to chop and sauté for me. Time 4 sec speed 6.)
- Add potatoes, almond milk & stock paste. Bring to a boil. Stir regularly. (On the Bellini: set Time 25 min speed 2. 100 degrees)
- After 10 mins add in avocado & green onions as your soup is stirred.
- Add more water or milk depending on your preference of thickness.
- Add pepper to flavor.
- Enjoy!
